Feeling really excited and cheerful to go shopping this lunch break around my new office location and as expectation, I am super (even over) satisfied by the good deal in the fresh fruit market. Well, the truth is you should foresee and accept any situation you might encounter after you paid almost half price as usual!!!
Here is the story I paid 10 Hong Kong dollar for 10 green apples in normal size and I got half as this quality and even worse (broken or already going bad as I can see!) and then coming out one mission in my mind throughout the whole half day!!!!
I Must Finish All Those Bad Ones Tonight!
&
A good idea popped out in my brain - "Make-Apple-Dinner", just like what I want to share with you all :D
It's no carb, only healthy fat, vegetables - enough nutrition & vitamins and very important to me (personal opinion) a cheerfully colorful looking in my plate.
I still remember my first experience to try warm apple dishes, which have a very strong cinnamon taste, and to talk about texture, it is similar to a popular French dessert or Hong Kong one - Poached Pear in Red Wine. But what I made for myself tonight, is a perfect combination to avoid sourness from the heated-up fruits. I used coconut oil to replace normal olive oil for cooking, plus I really enjoy the extra milky & sweet adore from natural coconut oil, which works similarly as adding sesame oil while cooking normal Chinese dishes. In the red-color vegetable & fruit family, I took carrot, tomato; from green family, they are (green) apple and avocado; last color is yellow, guess what? it's banana :)
Recipe:
- Apple *3
- Banana *1 (just add extra flavor as you wish)
- Cherry tomato *4
- Avocado *1/2
- Carrot *1
- Coconut oil (for cooking) *1 spoon
Preparing and Cooking (around 10 minutes):
Cut carrot, cherry tomato, apple into small cubes.
Warm up the flat pan while melting coconut oil and spread the whole pan. Pan-fry carrot first as it's the hardest one and needs more cooking time, then tomato and apple; try to keep all cubes being cooked in a balanced heat, and if you like, you could cook a bit longer until few apple/carrot cubes turn to dark (over-burned). Last stage is just an option - banana. I cut some banana into the pan at last seconds and to add a little sticky feel and 'tropical flavor'. OH!!!! Almost forgot, you must flavor the whole dish with some white & black pepper, sea salt, and if possible, some special spices/cinnamon power as you like. AND, tips for people who don't like the sourness from the heated banana & apple (also applied to any kind of fresh fruit), I highly recommend to add more black pepper and salt at this last flavoring stage.
Last last but the most important, comes my side dishes - avocado. Just cut the lovely avocado into thin slices and place them around the plate in a beautiful presentation way.
That's it :)
Please enjoy your healthy and cheerful dinner/lunch/brunch, anyway, I mean anytime :P
