Last Autumn, I had French Countryside Tradition - Cookpot in Spoon by Alain Ducasse , which was impressed me a lot just by seasonal vegetables and fruits; after the first week of crazy work I decided to make myself a big meal for Sunday dinner!
I was making MY COOKPOT without recipe which even might sound crazy to you, but let me explain. Cookpot with vegetables and fruits (Home-made version instead of Michelin/Fine Dining Restaurant version) is just a combination of super-thin-layer vegetables and fruits placed in the pot decently and baked with basic seasoning and olive oil. To add some color, I bought raw salmon in a promotion price (housewife tradition - go for promotion!) and made a upgraded salmon version.
Here's my recipe :P
Ingredients:
- Half onion
- 2 small-middle-size potato
- 1 cucumber / 1 zucchini / 1 eggplant
- 1-2 carrot
- 2 tomato
- 3 pepper (colorful)
- 1 large piece of salmon
- Italian herbs
- Sea salt
- Olive oil
- Black pepper
- Everything in very thin slices, very important to cut as thin as possible so that the heat can go through easily and the taste would be softer in the mouth-melting way.
- Layers by layers, to place all you have in the pot which is ok for oven. I prefer a base layer of onion first then place a layer of potato, then just do whatever color I prefer. BUT, remember before you go into next layer each time, DO add olive oil, salt, pepper and herb (just little and slightly cover all).
- On the top is the last layer of salmon which is isolated by thin layer of onion with vegetables below. And some decoration as well as seasoning again as finishing.
- Oven as 250 degree with an overall heating mode, for 20-25 minutes.
