Street food is one of the typical streetscape in China and of course, on Gulangyu island! Let's talk about some deep fried snacks today; it's a small door-side shop, typical street culture! Name is so Chinese, called Palace Moon "宮廷月亮", do they mean the food was served royal persons in ancient times?
街頭小食一直是中國大街小巷的一大亮點,鼓浪嶼島上當然也少不了街頭巷尾的陣陣香氣與鮮活色彩!今夜就來聊聊島上的油炸小食。小鋪的門面十分有限,幾乎是藉了整個大街的門口才得以舒展開,的確是典型的“街頭”美食舖!店名挺霸氣但又有些神話色彩,“宮廷月亮蝦餅”,我的第一反應是嫦娥與月宮(我那是什麽聯想思維(⊙o⊙)?),猜想宮廷月亮蝦餅的由來可能關乎到古時皇宮貴族御用的菜色吧?
The signature dish is deep fried cheese& shrimp cake and BBQ octobus. As my observation, more prefer shrimp one. You can see the whole making process from the translate plastic box. The mixed shrimp and little vegetables is prepared in another small area. I cannot see the frying process coz it's done in back area, while after some minutes, I was offered one paper bowl of golden round cheese& shrimp cake which is well cut to 8-9 slides. Again, the sweet and spicy sauce is an additional flavor for the dish. The texture is super crispy with a very thin but soft and strong flavor of cheese under the crispy flour. Inside, you will find those milky yellow cheese is semi-melted and stick onto the shrimp cake, which is a little elastically chewy and fresh.
招牌爆漿起司蝦排、月亮蝦餅以及爆漿魷魚,似乎大家對前者更感興趣些。街頭小食的一大特點便是現點現做,且送埋現場製作的視覺享受(即使沒什麼好欣賞的)。店鋪門口就有個大大的長形塑膠玻璃工作箱。事先準備好的蝦肉碎混著些蔬菜粒堆在一邊,店主直接拿那些“半成品”入身後的大油鍋油炸,可惜看不到那個油炸的過程。幾分鐘后,一紙碗新鮮炸起的熱辣蝦排就到手,并已被切成幾塊利於邊走邊食。又一次與甜辣醬相遇,島上這個醬汁實在太常見了;蝦餅外層的油炸脆皮是我吃過最為鬆脆且乾淨的,油分瀝的乾脆,不會油滋滋的,口感乾爽,則更突顯本就脆啵啵的薄薄炸粉皮;内裏的蝦餅好似披薩一般,竟然有拉絲的效果,且每一塊都能吃到一大團彈牙有稍有韌勁的芝士(起司),即使沒有爆漿那麼誇張,我也完全收穫外加給個“贊”啦!
Second round- Fruit and cheese are not a fresh combination, and banana is often used for deep fried dishes. Deep Fried Milk banana is the sweet choice there. Roll in the flour mice with cheese, and be fried in the boiling oil. You will get your hot banana cut well in a plastics container dressed with a little sweet & spicy sauce. The super crispy and hot fried skin is never oily when you have the 1st bite; then chew it with fresh and super sweet banana; such a simple but amazing snack!
第二輪改吃甜食,水果與芝士的組合也不算新奇,而眾水果之中要屬香蕉最百搭,燒烤與油炸總能有香蕉的份,猜想主要原因在乎香蕉經加熱不變酸反更甜的特質,若是換成蘋果,愛與不愛的就估計要參半了。
炸鮮奶香蕉是這個鋪頭裡唯一的甜食選擇,小段香蕉在平鋪的炸粉上滾上兩圈,全身均勻鋪上一層炸粉后便入油鍋。不一會就有的一份靚靚的黃金扎鮮奶香蕉,店家依然會貼心的添上甜辣醬。咬一口,讓人驚豔,炸粉乾爽與脆皮的薄脆程度甚至比先前的爆漿蝦餅更勝,且炸粉均勻非常,薄得又恰好為香蕉披上一層衣,一點不會有結塊的現象,老闆果然是熟手!高溫使香蕉的糖分更突出,熱熱的香蕉甜香止不住的溢出,嚼在嘴裡脆皮熱辣辣,貼著香蕉的那一層淡奶與香蕉本身竟然還是微微涼的,如此高溫的滾油竟然都無法讓香蕉熱熟,厲害!老闆似乎可以選用並未全熟的香蕉來炸,於是吃的時候口感就會較為挺實,咬在嘴裡是滑滑的,超簡單又超美味的小食!
