麻辣燙曾幾何時是大學時代每週必吃的一餐,可謂是風雨不動。即使知道麻辣燙既不衛生也不健康,甚至致病致癌,百毒集一身,但奈何其熱滾滾的湯頭,香辣重口的刺激口感,以及大雜燴式的“滿漢全席”讓人好似上癮一般的迷戀。
麻辣燙, I don't know the official English name of it, I just consider it as mini Chinese hot pot. It's the must item for each university student living in school every week, probably every Friday have it. All is clear about the healthy problem of it, actually it's the top 1-3 of the most poisonous & unhealthy food list, coz the soup is boiling all day that the indigents will release a lot poisonous metal elements... While it's still very popular for its spicy and hot tasting.
大學之後接觸麻辣燙的機會便劇減,也許是意識到健康的重要性吧,也許是眼不見為淨,偶爾回到上海,也正巧與友人出街覓食,一向愛好麻辣燙的友人便拉著我去了,改頭換面的麻辣燙小鋪。
Now, 麻辣燙 is changed a little bit to be more healthy coz people start to realize the healthy problem. Last time back to Shanghai, my friend brought me to try the new mini-hot-pot.
何為改頭換面?搬入shopping mall高層的飲食區,有屋簷的遮擋,店鋪亮堂,大小食材看得清清楚楚,湯頭用上時下流行的健康搭配日韓元素,價格當然高過出面沿街的鋪頭,但也合情合理。
凍柜里的食材以豆製品與蔬菜為主,丸子類不多不少,肉類以加工類為主,海鮮幾乎絕跡,這個是麻辣燙食材的共同特點,不過也正適合只求蔬菜與豆製品的我。拿著小籃子自由挑選后去一旁櫃檯選湯底兼結帳,拿著小號便可入座等候。
The shop is on the high floor of a big shopping mall; in-store and tiny, what a big change to the old style 麻辣燙! (most of old ones are along the street, and never mention the environment). A big counter displays all you can choose to put into the pot from seafood (a little), meet balls, vegetables and bean curd products. After picking up all you want into the little basket, go to choose from 4-5 type of soups (quite a Chinese-Korean-Japanese mixed list).
朋友點的是番茄湯底,不是假惺惺的鮮紅色,色澤倒是近似家中媽媽牌的番茄湯,飄著些素油花,飲一口湯底略帶膠質口感,潤澤而鮮甜,略有番茄酸,沒什麼味精味。柴魚高湯,乳白色的湯底稍顯稀薄,呷一口是濃濃的柴魚咸香,口感更潤過番茄湯,且略帶奶味,平時吃得較清淡的我覺得稍有些鹹,是值得一試的湯底。
My friend chose potato soup. Not a fake red color, the brightness is so close to the home-made potato soup. Soup texture is a little milky and sweet; tastes fresh. Bonito soup is my choice, featured with bonito taste, a salty flavor with dried fish. That's worth to try!
